Crytek had CryEngine 3 mostly running on the Wii U back in mid-2011, so making a version of Crysis 3 should have been a no-brainer since they were already stripping down the engine for PS3 and 360.
Crysis 3 on Wii U was never an issue of technical limitations; if it works on the PS3 and 360, the Wii U should more or less handle it at roughly the same capability. The real problem is that there just wasn't a business case for releasing it on Wii U. The whole concept of "I buy Nintendo consoles to play Nintendo games" is really coming back to bite Nintendo in the ass right now. It means there's a big chunk of people - particularly heavy game buyers - who will buy all multiplatform titles on any other platform because the Nintendo platforms will always be assumed to have the worst-performing version. Why they didn't just release it as a downloadable title, however, I've no clue. Maybe it's too large to fit in the ~2GB of spare room on the Basic Wii U model?
It would not surprise me to see Crytek - or at least, EA - come out with Crysis 3 Enhanced Edition for PS4 and next Xbox this winter; basically a slightly scaled down PC port. It certainly wouldn't cost them very much, and they'd be able to have an immediate launch presence on the new consoles .
