You have to consider a lot of those copies aren't being sold. $100 is way too much, but I have seen local shops selling used copies of FF7-9 for $30-50.
I'm surprised they haven't rereleased it; if not a remake, as a PSP port or something. Of course, there's nothing keeping you from finding a good emulator and some isos; and you're really not taking any money away from SE, considering that they aren't making a profit on sales either way.

Whether you like it or not, bad graphics do affect a game. They make it hard for you to look at. It is pretty hard to play a game you are not looking at. They ruin the suspension of disbelief, or (visual) art value, depending on the styling. The worst sorts of bad graphics (frame rate, collision detection errors, and other errors and glitches) can directly impact gameplay.
That said, FF7 doesn't have bad graphics. They're just old. That probably makes it hard for some people to look at, and that's understandable. PS1/N64 is not a graphic style. 8bit, there's a graphic style. 2D sprites, there's an art style. Primitive 3D models? Not an art style, sorry.
