Play the Ghouls and Ghosts update on PSP. It's really good.

Hmm I think I messed up on that one, it isn't Super GG, but actually the arcade game from way back when.
I don't remember the actual name, one of my biggest acomplishments in gaming was finishing that game with a single coin (and you had to beat the game twice to fight the final demon).
But I'm gonna check that PSP G&G game as soon as I get a PSP lite.

that's one thing I don't get, 3D remakes of 2D games, where the gameplay is kept 2D.
Seriously, look at Guilty Gear, or Alien Hominid. Sprite gameplay can be *freaking awesome*, 3D can look good, but it'll be a LONG time before 3D can rival a good sprite.
Mega Man (at least 1-4) in full 3D with interactive environments and boss fights!
FFXI (XD had to say it. I'd kill to see this game in MGS4's graphics...)
Legend of the Dragoon. Sony's Best RPG ever, in 1080p! ^ - ^
Xenogears, as it was meant to be. The game was originally going to be 6 freaking discs long, but was condensed into 2.
Super Metroid (c'mon Retro, you know you wanna)
... and the grand daddy of them all (much as I love MM and FF) - The Legend of Zelda, a Link to the Past. It is still to this day (IMO) the best Zelda title ever, and I'd love to see it redone in Twilight Princess fashion or better.
I have more, I just can't think of/list them all. In the mean time let me just say that FFT War of the Lions and Dracula X Chronicles are GREAT remakes! PSP
I would be very sad to see A Link to the Past redone with 3D graphics. Part of what makes that game great is it's graphical style, and the overhead camera. If you're going to retool the game to such a huge extent, you may as well not even call it A Link to the Past.
I'd like to see a ton of 2D NES games remade in HD, in all their 2D gameplay glory.
That includes:
-Batman (Sunsoft's)
-Castlevania -Bionic Commando -Contra
-Robocop (the old 2D arcade game)
-Shatterhand
-Super Ghosts and Ghouls
-A bunch of other games I don't even remember their name.
Note that while I'd settle for 3D models with a 2D gameplay (IE the new Castlevania remake), I'd rather see HD sprites with very fuild animation instead.

Nitpick - It was originally supposed to be 6 episodes, not disks, long. Hence the reason Xenosaga was also supposed to be 6 episodes long.
I guess the creator just has a knack for pissing the wrong people off, so really, it's never going to get made.
Small note, I kinda had a hard time expressing this when I was talking about Shenmue. Shenmue was supposed to have, I believe, 16 chapters. The first game was one chapter, but I believe Shenmue II was three different chapters in one. Or something like that.
I'd like to see the entire story in a single box, even if it takes a ton of disks to get all that content out.
Smaller note: I did some research, it looks like Shenmue III has actually been finished, but they're waiting for some company to agree to release the entire series on a next gen console.
God I hope someone gets it on the Wii. I would LOVE to have the entire Shenmue series on the Wii.
Part of what makes that game great is it's graphical style, and the overhead camera.
And then there's the story, the gameplay, the puzzles...
I don't believe a simple change in graphics will violate the spirit of the game. Actually, I think it could only be done justice with maybe the cell shaded style, a la Windwaker.
