Turn up the age setting on DOA and you will notice the bouncing.

Yeah. The higher you set it, the more the breasts jiggle. It's quite unnerving.

Not sure if the option is still there in DOA4, but it was in every game before it.

I have to agree that sprites have a charm to them that can't be beat. Look at the Tales games. Games like Tales of Destiny and Tales of Rebirth have awesome 2D graphics, but games like Tales of the Abyss have, for the most part, clunky character models that don't really look that good.
Of course, I'm not saying that 3D games (Even fighters) are all bad. With platformers, they add a new level of gameplay, while with RPGs, they allow for more stylized effects.
