Dark Souls is pretty open, its just very intent and successful at killing you. The only barriers to exploration are the mist barriers that imply a boss, but once out of the prison I pretty much had three different directions I could plausibly go in. Its not advisable to head down to Blighttown first thing, but if you want to go about it that way, you can for all the hell you'll have to endure for that choice.
But what you're really saying is the story doesn't appeal to your personality. Its expository writing, sure, but aside from the opening cinematic its pretty much just layers and not forced. Its not like its FFXIII where they constantly spout gibberish you don't even begin to understand until about 30 hours in, if that.
So the Toatha Dehoen (or whatever its spelled) are basically the dark elf version of the Thalmor from TES, out to kill all mortals before they can have a god of their own. You are the chosen one to save the other races. Par for course in high fantasy so far. Now on to the layers. I don't know much about RK Salvatore, its a bit too flowery, but its not really a stretch for me.
At least for all the gibberish and Bioware-ish cutscenes there's a world open enough for exploration rather than a blatant set of rails with story flavoring.
