I want to look at the matter from a different angle than one of pure responsibility. For instance, though I love it whenever customization is afforded to me in video games and card games, it's like Mark Rosewater said: restrictions breed creativity.

This is actually so very true. Social psychologists Dan Gilbert and Barry Schwartz have written papers and books on this.
I can't watch that video right now, but I can say I disagree with the title. Is that just a hook to pull me in, or are they denouncing the freedom to choose?

No, it's not advocating you be forced into things, just saying that an overabundance of options is more paralyzing than empowering and makes people less happy with the choices they make.
