Short answer yes.
It gives you access to backgrounding and other functions that your iPhone doesn't normally have. Quick toggles that enable you to quickly enable and disable WiFi, Bluetooth, Plane Mode, etc. You get access to what is called iFile which is a file browser. iFile gives you the ability to listen to MP3's downloaded directly to your phone so you don't have to use iTunes. You get access to download managers for Safari which lets you download file types that you couldn't normally download. And to give you access to those files on a PC, you can use iFile to set up a web server to download them unto a PC. You can download bit torrents on your phone (my personal favorite). And your unauthorized apps, I don't know if this is what you mean, you can download cracked apps in ipa form that you normally would have to buy from the iTunes store for free. You can set up widget on your lock screen. You can do themes. You can have vertical and horizontal scrolling icons on the springboard. You can horizontal scrolling icons on the dock. You can set up a stack of icons. You can put more icons on a single page in the springboard (5 rows, 5 columns, etc.) You can shrink your icons, which pairs up with the previous comment. As you have more rows and columns your icons get too close to one another. There is just a ton of shit that you can do with it. It opens it up and makes it so much more useful and user friendly that you'll fall in love with your iPhone all over again.
Fyi, if you update to newer firmware versions you can potentially block your device from being jailbroken so the sooner you do it the more chance you'll have of doing it successfully.
And yes, Rockbox for the iPod is the shizzzz. But I believe that is old school now and there is a better app out. I don't bother since what I have works fine for what I use it for.
