Yeah, red velvet cake from a box can't even begin to compare to red velvet cake from scratch, they really are two totally different beasts.
Just cooking one from scratch is akin to advanced quantum physics.

Ya this is a once a year cake. LOL I didn't make her one last year because I was still pretty weak from surgery so I had to this year. Shouldn't have eaten it though....ah well learned my lesson the hard way!

And I dunno about making it from scratch. I make a pretty mean cake straight out of the box. It's in the later stages of cake making that I have trouble. Whipping sprinkles at the side of a cake in hopes they'll stick is a bumpy road.

I have to say that making a cake from scratch isn't that hard.....but its not easy either. Making a cake out of a box even a monkey can do (sorry Dak ). Though cake from scratch and cake from a box are 2 entirely different things in taste. Cake from a box is usually lighter and softer than cake from scratch. Cake from scratch is thick, dense, moist and flavorful......and it fills you up! LOL

Red Velvet Cake has chocolate in it but it is not a chocolate cake with red coloring in it. The chocolate is not overpowering and sometimes leaves you to think "Hmm...is this cake chocolate or isn't it?" THAT is Red Velvet Cake! LOL (It's kind of hard to explain and if you lived nearby I'd even break down and make one for you to taste.....though you'd have to get it before my daughter saw it!)

The frosting is just as much of a star as the cake is too. They compliment both very nicely. Neither is overly sweet but both are very rich. The frosting is smooth, buttery (better be with nearly a pound of it in it), and creamy. The lightness of the frosting really compliments the heaviness of the cake.

If you'd like the recipe I can PM it to you. (If my mother knew she'd kill me!....SERIOUSLY!) You would need to have someone thats fairly decent at baking (and not from a box LOL) to help you with it though.

I dunno if I'd put food coloring into one of my cakes, it just doesn't seem natural. I also like my cakes/pies to be as sugar free as possible, so that you're tasting the cake and not the sugar.

And I dunno about making it from scratch. I make a pretty mean cake straight out of the box.

Anything made from scratch should be better than something out of the box. I've got an old family chocolate cake recipe that's a sure fire win at any cake contest, even rigged ones! I've only made it once though, back when I was in the boyscouts. I still sometimes wonder what cake making had to do with boyscouting o.0 There is also a good carrot cake recipe that we use, ahh, I've missed that one. So nice and rich and moist and fluffy, that's what a good cake should be like.

Getting to actually make a cake kinda irritates me though. People in my family (mom) are always complaining that it's too fatty and that they're trying to lose weight(mom), then get ice cream (mom), have a bunch of fatty foods like grilled cheeses and other foods of that nature. When we could have had a carrot/chocolate/whatever cake!!!!!!!

Mmm, now I'm thinking about cheesecake, every now and then we put white chocolate along the bottom of it, but that makes it really rich and we don't do it often.

And all this thinking about cakes isn't exactly helping my diet!

I may have to challenge TGM to a cookoff if we ever go to the same FF event or something :D

Oh, and Dak, sprinkles are for ice cream, not cakes. Although I wonder if you could mix them into the frosting before you put the frosting on the cake? You'd use a lot more of them that way though, so dunno if you'd want to do that...

Now my brain is stuck trying to figure out how to get an even spread of sprinkles onto a cake.

Unfortunately, you'd lose. I've already won a few ribbons from bake offs in our area. I also make side money baking desserts for a local caterer. I always wanted to go to some type of baking school and really get into it but there doesn't really seem to be anything in this area like that. It's either take all these pre-reqs that I'm totally not interested in or nothing.

As for sprinkles, it only works best with a certain type of frosting. You can make your frosting a bit tackier and then they stick much better but do NOT mix them in with the frosting. It looks absolutely horrible and like Vyuru said, you have to use a ton of them to be able to even see them. Basically frost a small portion of the cake (like 1/2 of the top) and then put sprinkles on and GENTLY pat them to adhere them to the cake better. Do small portions because frosting tends to dry and get a crust after a few minutes so if you do the entire cake and then put on the sprinkles, they just don't stick because its dry and not tacky.

Beer + Champagne, one of the few drinks I can actually tolerate (Did I mention I don't drink at all? <_< ), which is pretty weird considering how much I hate beer.

I didn't touch alcohol at all until I hit my mid 20's. And all I really drink is beer. I don't even drink enough to get myself drunk. Though sometimes I wonder how I could tell if I was drunk if I was. I don't remember ever having an actual hangover though >_>
