Started reading the site for the WaterFryer. It states that it reduces oil oxidization by 50%, or simply to state it doubles the oil life. What they are doing is that only the top oil is reaching the 150-200 degrees, the bottom oil is being cooled which is pulling the hotter oil down along with the waste reducing the oxidation.
The water were the fish are is actually around 55 C (131 F) still pretty hot for a fish. Apparently the only cleanup it's stated needing is to only dispense the water were the waste has collected. So you don't even have to empty all the water.
EDIT:
Misread, the state that bottom most oil is at 55C were it's being cooled. Doesn't specify the water's temperature. The way it seems hardy fish could survive in that space, definatly not the delicate fish it would kill them.
Then also like the image Jei posted, the thing has two draining points, the very bottom to drain the water and one were the oil and water meet. Yeah, in the video the spot they show were the water/oxygen is being pulled down into the water and you see those round tubes, that's what is cooling the oil.
