As far as games go, the only zombie game I've played myself is Left 4 Dead 2, unless you want to count Plant VS Zombies. And I loves me that 4-player co-op. I've only ever watched other people play through Resident Evil 1 and 2, I should probably do that myself some day.
Favorite zombie film is Shaun of the Dead, but the only other ones I've watched are Resident Evil and Zombieland.

Film: 28 days later (though I'm not the biggest fan of "Infected" zombies, it was very well done - 28 weeks was a PoS that would never happen)
Book: World War Z
Graphic Novel: N/A
Game: Resident Evil 3 (though The Last of Us could very replace it) or the RE1 remake on GC. Both of those were very well done and pretty intense. RE1 remake was much scarier, but Nemesis did a good job of instilling a constant sense of Paranoia.
I would include Deadspace, but the Necromorphs are really more of a space virus. I don't consider them zombies.

I don't really understand the recent surge in popularity of all things zombie. More to the point I don't really tend to enjoy zombie movies/games/etc. The interesting point in all of that media is always figuring out the source and the cause, so it's not the zombies that intrigue me so much as the mystery.
That said, my favorite bit of zombie media in recent memory is definitely High School of the Dead. Again though, it's less about the zombies and more about the show taking a look at what happens to society in a post-apocalyptic world.

I don't think the problem is more that there has simply been far too many bland zombie iterations in recent years. It's a pop-culture cashcow with very few people taking the time to put any real ounce of creativity into it.
That said, I'm still highly impressed with "The Walking Dead" - amazing, cheap indie game that's absolutely worth it. I'm going to wait until all 5 episodes are out however so I can enjoy it all at once. Also, the World War Z movie is pretty retarded... the book was a work of art because it was basically a collage of short stories, all of them interesting and well written. There are aspects from some of those stories the movie could explore, but as for any sort of continuous, lengthy narrative...
Eh, been there done that. Some things might just be better left to the imagination as well, like North Korea just going dark and no one knowing wtf happened. Though I have to admit, I'd love to see Canada - we struggle to survive during the summer, hold out during the winter as the zombies just freeze and then come spring burn or otherwise destroy the corpses before they can rise.
It might be OK if they did it in an Animatrix style fashion, but even still I just don't think it's a good idea.

I only like this sort of thing when something is done a little differently regarding them. Otherwise it comes of as another Night of the Living Dead/Crazies knock off.
High School of the Dead was OK, as was The Walking Dead series (game, comic or show) because they look at human relationships and survival more heavily.
Otherwise I like AHHHH! ZOMBIES! more in concept than execution. It was a story told from the perspective of the zombies themselves, thinking they were normal and the world had gone crazy trying to kill them, so they tried to escape. They would even try to rationalize why a dog they were petting was suddenly dead and eaten and things like that, they wondered how their pursuers were so fast. Two fo them were a couple that proposed and wanted to tell daughter's father the news and stuff like that.
Shawn of the Dead also works.

Starting in on High School of the Dead now while I wait for Curiosity's EDL coverage to start. Is it a really common thing now for anime to have this much gratuitous T&A? Girl's getting attacked: go full frame to her panties for some reason. Protagonists looking up at helicopters: perfect time for an upskirt shot! Seriously, it's out of place and distracting.
