I saw someone mention FLCL (Fooly Cooly) upthread. I'm getting into it now that it's being replayed on AS and I gotta ask if it's supposed to be that friggin' WEIRD, or is it just the dubbed version?
Nope it IS just that friggin' weird! lol Personally too weird and out there for me to enjoy.
I'll also vote that Chobits wasn't that as great as everyone made it out to be. I was all amped for it and after watching the entire thing it just made me go 'meh'. I will say it had great potential but somewhere along the line it just went in the wrong direction.

Vampire Princess Miyu (OVA, not TV)
Supernatural, ambiance. Pro: Appealing designed characters moving through entangling plots, at an exacting paced over lovely, haunting music. Con: They didn't spend the money on the animation portion of it, though, so don't get it if you're allergic to panning over still shots. The story was never resolved.
Akira
Sci-fi, ESP, dystopia. Pro: A good action flick, but really a disguise for sibling rivalry drama. The drama, however, is a cover for some charged social commentaries regarding the tendency of government to want to control people, how authoritarianism breeds counter-culture, etc. Maybe. Also, the music was quite daring for its time; worth paying attention to. Con: May be difficult to pick out and understand the social critiques, especially on the original NA release with its horror dub. Missing that understanding may make all the on screen mayhem a bit trite and overblown.
Mononoke Hime ("Monster Princess" in English?)
Historical-ish, Supernatural; Miyazaki film. Pro: A Miyazaki original. Good animation, strong and memorable characters. A discourse on the nature of relationship between men and land, in the format of an action filled epic. It also makes surprising observations on some very human topics; watch what it has to say about leadership, love, devotion, and facing death. Con: None, really. However, a conflict does not mean a fight between good and evil. Those who cannot understand or accept that will miss out much with this film.

If this had people dressed up in kinda bird-esque uniforms then I vaguely remember watching it as a child. If not, then I'm not sure where that memory is coming from
That's the one.. I watched this constantly when I was real young, but I didn't even know it was anime until I saw an anime special on Starz recently.

I maybe a little late but just thought I'd share some of my personal favorites.
Gankutsuou
Amazing anime with it's very own unique art. The plot was amazing, but there isn't an whole lot of fighting. However this anime is one of my most favorite, up there with Rurouni Kenshin OVA.
Rurouni Kenshin OVA
I know everyone mentioned it, but I wasn't sure if they were talking about the anime or the OVA. Personally I loved the OVA alot more with it's art and background music.
Code Geass: Lelouch of the Rebellion
Also one of my top favorites. It has a strange art touch to it imo and the characters are pretty neat. I highly recommend this as well. The downside . . .. they haven't released season 2 yet T.T
Full Metal Alchemist
The anime is a bit old, but it still has a good story to it. I mainly liked it near the end and it took like 5 or 6 episodes for me to really get into it personally.
Karas
Although it's not really my favorite, it has very nice visuals and an average/above average amount of fighting. The plot is a bit average though.
Gundam
There are a TON of versions of this. It's pretty popular. However they reuse some scenes alot >.>. I'd give this a shot. Currently I think Gundam 00 is the most recent one followed by Gundam Seed/Seed Destiny.
Tengen Toppa Gurren-Lagann
This anime is . .. how should I say it . .. over the top? It has it's moments with good parts and laughs. I'd check it out. It's pretty good imo.
Full Metal Panic
This is an anime along the lines of comedy/action. It's has an entire season dedicated to just laughs and giggles. I believe they are working on a season 3, but hasn't been released yet.
Finally on things like Naruto & Bleach, they are good. I'm not going to lie however once they hit the fillers is when you scream. So just be aware of that.

On that note, I'd just like to point out two things. Gurren-Lagann does take itself seriously plot-wise, a lot more than the over-the-top action in the first episodes will let on. Secondly, the plot has a major twist at the middle, so it's one of those series you really have to see through to the end before passing judgment on it. That said, it kicks some major ass.
Ya know, I still haven't seen Voltron. Seriously, is it good?
