Hmm, thouht we had a thread like this already? Guess to afraid to ressurect it again for the 4th or 5th time >.>
Anyway Princess Mononoke, Fatal Fury (OVA), Cowboy Bebop: Knockin on Heaven's Door, Key: The Metal Idol, Aquarian Age, and Samurai X (Trust, Betrayel, and Reflections) are pretty good for start. So many others I could mention but that's good enough.
Ruroni Kenshin is a decent series fits right in-between Betrayel and Reflections. Yes it does give more depth to everything Reflections kind of just caps on.

Lol, would have to change mine... Since I've seen more Miyazaki ones.
It's definatly Miyazaki creations are first:
Princess Mononoke
Naussica of the Valley of the Wind
Spirited Away
My Neighbor Totoro
Howl's Moving Castle
The Cat Returns
Castle in the Sky
Porco Orco
Damn he's good, I was reserved at seeing some of them but ended up catching a few and I was hooked.
After Miyazaki then it's hard to say which is better, many of them are quite good.
I liked that movie that had brief periods of game play, what was it called? Oh ya Xenosaga.
All kidding aside, Akira, Nadesico, Evangelion and Cowboy Bebop were good films. Also think I should be ashamed of saying this but the OAV's Puni Puni Poemi were just what the hell, funny and odd all at the same time. Definitely not one for the kiddies though.
