Kenshin (first 2 seasons and the 3 OVAs, afterwards, read the manga for the TRUE 3rd season)

Naruto (ignore all of the 'filler' episodes that have come around as of late)

Bleach

X (television)

GTO (anime and rl version both are good)

Azumanga

Saikano (only anime series I nearly cried in... )

Evangelion (set the standards for many anime series)

Full Metal Panic (1,2 and Fumafuu)

Vampire Hunter D


Was going to say Berserk... but the manga > anime series. Sad... I remember seeing Berserk with subtitles on VHS YEARS ago

That's a tough call for me. I have literally hundreds of different series in my collection.

For recent series, the best are by far Full Metal Alchemist and Last Exile. Tons of other good series over the past few years, but those two stand out the most.

Currently airing, my favorite has to be Ouran High School Host Club. Very funny, off-beat series. Makes fun of the numerous yaoi series that seem to be the rage in Japan lately. I also enjoy Karin, the new .Hack, and am looking forward to more episodes of Witchblade.

For classics: Slayers, Urusei Yatsura, Tenchi series, Cowboy Bebop, Lodoss War OVAs, Ranma 1/2 (first 3 "seasons" and the OVAs, the rest was really blah) and the .Hack series. Certainly not an all-inclusive list, but the ones that stand out most to me.

And then, of course, I love anything done by CLAMP.

Ghost in the Shell, Trigun, Bleach (fillers, eww), Naruto (no more fillers, yay!), Cowboy Bebop, Ergo Proxy, Full Metal Alchemist, Full Metal Panic.
