Akira, Evangelion, and Cowboy Bebop are the most captivating ones i've yet to see, but I really do enjoy all animes. Specially Silent Mobius, been watching that a lot lately.

Akira, Evangelion, and Chobits. I thought Naruto was okay, but nothing spectacular so I didn't watch it all. Uhm, Cowboy Bebop kicked ass, as did Trigun. Hellsing was Uber-sweet. Other than that, Ah My Goddess was good. FLCL was to screwed up to even mention with a positive connotation. Does anyone actually know what was going on in that show? Freakin crazy.
