They record which parents and grandparents etc. your chocobo came from, but not who your chocobo's kids were, nor their kids etc.
Basically you can track a bloodline up a chart, but not down it. Though, theoretically, you could track your own, if you gathered enough information on your server of all the chocos and kept getting all the children's ancestry charts. Assuming the lineages are readily viewable by players.
I think this is how AKC records lineages too, iirc. You list who the dog's parents are, but when your dog has pups, you don't send in a list of all the puppies. Now, they do have the ability to run cross references and figure out which dog had certain puppies and so on and so forth, but thats not how the information is originally recorded.
