Taru = Too Weak, Mithra = Decent Challange, Hume = Even Match, Elvaan = Tough or Very Tough (depends on your funds), Galka = Incredibly Tough.
Yes, I skipped easy prey to show the difference even between taru's and mithra's.
That being said, in the upper levels, when you'll really have less MP than a taru, it won't matter as much, as you'll *usually* have a rdm/xx right there with you to help casting. Add that a blm/whm can help cure as well...and the pld cures himself...and you'll find that you'll always have enough mp to go to chain 3 and 4 easily. Chain 5 is where you'll have a little more trouble, but it's so rare to find a full party that can coordinate well enough to *consistently* get chain 5 on IT's that it shouldn't really bother you.
A good investment would be Roast Mushroom. They add +15 mp (pretty decent at all levels, to be honest), but the main reason to eat them is for the +mp regeneration. Since you'll be trying to med back a lot of your mp, these can help you out. With a good pld though, you usually can med for a large portion of the fights without much trouble, so these would make you have to med even less, so those chain 5's would come easier.
Really...the only time it hurts are the lower levels were +mp gear is scarce, or absurdly expensive (astrals...what first time mage could afford astrals...honestly). From the time you start getting RSE on, however, it gets easier and easier.

Oh, and Humes and Mithras have the same base MP and base MND, so would they not both be either decent challenge or even match?
On another note, a few days ago I had an Elvaan BLM in my party - she had 774 MP at level 58. I thought she was a Taru before I saw her. Granted, she wore the best equipment possible. Still, it is possible to come very close to Taru MP. ^^
In the very same party by the way was a Red Mage (lvl57) with 410 MP, it was a Mithra. With my 633 MP (boosted to 658 with food), I felt kinda cozy in the middle.
