Actually the best weapon to use would be H2H and sub monk. SA+Combo is a very nice WS.

If you want to talk strickly SA+WS damage, but I've prefered subbing Ninja and dual wielding swords with +DEX bonus so I can gain TP faster, and WS more

It's personal preference really. Both have advantages and disadvantages.
