Personally the difference in the main 7 stats aren't big enough to see a large difference for melee...I think the biggest factors are really HP/MP, in which cases you WILL see a difference if you're playing Tarutaru or Elvaan/Galka. Being a subless Tarutaru WAR isn't exactly the most reliable tank...once you get a sub job you SHOULD be fine though. I'm personally a fan of Great Axe because Shield Break's Evasion -40 is downright ridiculous, but if you're concerned about your ability to take hits, a shield (use axe, no swords!) will neglect a lot of damage.
