Getting back to the level question it really depends on how many Paladins your LS has and what level they are. If you've got 3 or 4 75PLDs then don't expect to do much except get swapped in for 300TP Spirit's Within and backup heal (those are very important jobs anyways, Paladin's should always be ready to step in as a backup healer when there are lots of them).
I started tanking Gods at 70 since my LS only had three Paladin's at the time (two other 75s, one who is amazing and the other who is totally worthless) but Byakko would one-shot me with Tripple Attack - not with Koenig and three more levels it only takes me down just over 1000 HP XD
Bottom line is do what helps your LS the most. Be ready to step in and get one-shotted or sit on the sidelines and backup heal if there are lots of other Paladins in the God crew; and above all have fun, God runs are some of the best times a Paladin can have ^_^
