Honestly...

It really depends on you. I think THF/NIN would be a more powerful attacker, however I think the NIN/THF is much more bad ass. More Ninjitsu, 2 Katana's, way cooler AF armor, better pullers, etc...

As for race, I'd say go Taru. Although it doesn't really make a difference at all, Elvaan have the worst DEX in the game (how they're worse than Galka's still baffles me though) well that and Taru's look way cooler. Then again, I'm not a good person to ask, because I rather dislike Elvaan in FFXI. I would make any of the other races my character before an Elvaan. I just don't like how they look at all. In the end, it really won't matter which race you choose, so just choose what you like.
