Elvaan are arguably (see "arguably") the best race for Monk. Galka are also thought to be the best race. Elvaan excel at STR and MND stats. As a Monk, STR will be your primary offensive stat followed by Attack and Accuracy (some prefer DEX of STR, but DEX doesn't mean much to me. If I need a higher hit rate, I'll take ACC. Criticals? Meh). MND allows for higher Chi Blast damage. Don't worry about this stat until much later in the game (65+).

Galka have higher VIT, HP and DEX over Elvaan. Chakra takes your max VIT and multiplies it time 2 and gives you that HP back, and Temple Cyclas augments it and multiplies it time 3 and allows you to cure Paralysis. All of these stats mentioned will help you as a Monk at some point or another.

I think mnk is one of the jobs that isn't so much swayed to one or two of the races. Elvaans and Galkas are the two most suited, though I think they are pretty evenly matched since where one may lack a bit in a certain area, the other makes up for it. Hume and Mithras also make fine mnks though, being well rounded and all. It means you don't have to concentrate on improving any one weakness (like Elvaans need to compensate for low acc with quite alot of +acc gear, for example). And even Tarus can make good mnks if done right, you just need to really pump up that +str and +attk.

Sorry if that didn't really answer your question, just giving you sort of the bigger picture.
