Well nothing stops me from using both Strength and Agility. Mithra already have the highest natural Agility, and the Genin Earrings can give +8 as long as I have Nin subbed. I can still wear two Courage Rings and/or a Spike Necklace.

You can only use one Genin Earring, the other would have to be Drone.

Yes, Genin Earring is rare, you can only have one. Anyway...

Boost STR. Forget about DEX and AGI; as a Mithra, you have all you need. What you're lacking is STR, and STR is extremely important. It affects *all* off your physical spells, even if it is not one of the mods. Aside from STR, I'd try and include as much accuracy+ and MP+ gear as you can. It's very easy to run out of MP quick on BLU if you're not careful, so MP boosts can help a lot, and accuracy affects both your sword swings (for TP and extra dmg) and your physical spells (which are your main damage).

The only time you should be caring about evasion is when soloing. Against mobs in an exp PT, it's not gonna help you much; they're gonna hit you pretty accurately regardless of how much evasion gear you have. And as for AGI, it's a mod on a few spells (mostly ranged ones, like Feather Storm and Jet Stream), but I tried macroing in AGI gear for Jet Stream, and the results weren't really noticeable. I wouldn't worry much about it. If you're looking for earrings, go with either MP earrings, or attack earrings; Attack doesn't affect spells, but does affect your sword swings, and what many BLUs don't realize is that your sword damage, when added up, *is* a significant portion of your damage.
