I'll say right now sorry for any ignorance that follows. >.> Ok I'm almost a BST. (I started lvling WAR, now I have to lvl WHM, then lvl BLM to sub with WHM just to lvl WHM to sub with BST! Arg a vicious subjob chain!) Well anyways I'm new to the BST thing (despite the signature pic, that was made with the modelviewer >.>) anyways I heard some monsters are un-charmable, and some zones are full of un-charmable mobs. So I was wondering exactly which mobs are un-charmable?

What mobs are "uncharmable?"

You cannot charm any mob which is considered sentient. You can verify if a mob is charmable by using the gauge command if you aren't sure. Specifically:
Immune to Charm:
Goblins
Yagudo
Quadavs
Orcs
Molboros
Cockatrice
Great Birds
Manticores
Gigas
Weapons
Elementals
Magic Bots
Golems
Robots
Hectaeyes
Beasthounds
Skeletons
Ghosts
Most NMs
Highly resistant to Charm:
Cactuars
Raptors
Jellies
Good to Charm:
Bats
Beetles
Crabs
Crawlers
Scorpions
Funguars
Tigers
Dhamels
Spiders
Rabbits
Mandragoras
Sadly theres a lot more stuff you can't charm than stuff you can. Please feel to post and add more.

You might want to glance through http://mysterytour.web.infoseek.co.j...000mobinfo.htm it shows which monster classes can and cannot be charmed as well as which are resistent to charming.
Starcrossed has put together a very good list for you of uncharmable monsters. I'd just like to add Mandragoras are resistent to charm. And Hecteyes are not immune to charm.

Yeah and Beastmen summoners (Expeditionary Force ones) are all mighty
Having the charm bind uncharmable mobs is nice. This has saved my from many aggros
btw nice Sig CoalChamber, and good luck.. sit with it even when it seems impossible
