It sure would be interesting though. I doubt learning spells by scrolls would be the way to go. Instead I think that you would have to go to the various areas in Vana'Diel and stay in the area fighting monsters for a while so you could learn different aspects of magic. Example, Wind Terrain magic can be learned by battling in La Theine, but you can expand on that knowledge by learning more Wind Terrain magic from Lufaise Meadows or some such.
Actually, what they could do, would be make them have spells, such as the Elementalist in FFTA, that they can learn, but also have the job ability "Geomancy" that has an effect based on what they're standing on, the strength determined by their level and stats. They could even go out on a limb and give them similar abilities that do effects based on the day and weather.
Not only would this give them an MP pool so they can sub a mage job better (more HP than a Red Mage, but less MP?), but it would also give them more versatility, so they can be effective in different areas. Sticking with the job's capabilities, they should be able to use Axe/Great Axe pretty well (B+ or A-, probably).
Jobs that SE were considering before the Rise of the Zilart expansion included Geomancer and Gunner (Chemists from FFT). The Geomancers were to be named "Feng-Shui Masters) which is a mouthful all on its own I think there was one more, which may have been blue mage but I do not remember.
I think Blue Mage, if even considered, would be constrained to Beastman abilities. However, what good are those moves? Not very good. Bomb toss maybe, but that's about it. In a party it would be useless, so I think that's out.
Geomancer... It's hard to say. Geomancers' skills in FFT involved terrain damage mixed with enfeebling statuses. They'd be good for Magic Burst, I suppose, but if implemented I could see this as a soloing job (at least up until level 40).
Gunners would be useful mixed with alchemy skill because they can use items on other players (not to mention Slug Shot with a gun is absolutely devastating) but it conflicts with Ranger. I don't think this would be implemented.
Keep in mind that the place where we have the least number of options are NOT Damage Dealer jobs - I'd much prefer to see those jobs fixed for what we have now rather than trying to cram in new jobs. Dragoon, Samurai, heck even Ninja, whcih is a fairly powerful job, are still lacking in anything new over level 55 or so, unlike the rest of the jobs out there.
If we get any new job classes, they're going to more likely be classes that can be used as tanks (outside of the Paladin / Ninja / Warrior trinity) or enhancers (outside of the Bard / Red Mage pairing). Probably that's what people should be thinking of if they do want to realistically see new jobs in the game is some more people to fill out the back line in a party - because at the moment, we have a glut of damage dealers. Adding more will simply mean waiting long LFP for everyone, at least from where I'm standing.

- Paperboy. This is a job that rides around the mob in circles and throws newspapers. The higher you advance in your job, the better newspapers you can throw. Level 1 - Washington Post, Level 10 - New York Times, Level 25 - Wall Street Journal, ect.
- Liberal. This job's abilities will be to annoy the mob. It's kind of liek a Red Mage. As you advance, you will learn different subjects to babble on and on about. Level 1 - There are no WMD, Level 10 - The President is a nazi, Level 25 - The Vice President's daughter is a lesbian, ect.
- Pothead. This job won't have many uses. In fact, it'll do a whole lot of nothing. The pothead usually just stands at the back of the PT, stoned, sometimes passing out. He'll make comments like "whoa dude, that magic burst was killer" or "I'm stoked about this sweet exp". Becoming a level 75 pothead will be an amazing goal for any player.

Use: For 30 minutes, you become the job/subjob combo of your choice, at the level of the job you were when you used the potion. i.e. if you took the potion as a 60 DRG/WAR and chose to become a BRD/WHM, you would be a 60 BRD/WHM. You will gain all spells/abilities. You will not get any equipment.
While thus transformed, all exp gained will be towards the job you were when you used the potion. However, you will get 50% less exp than normal.

there will be new jobs for sure but its really hard to make those very unique jobs such as the ones from FFTA since they really have to balance out every job and it must stay equal in gameplay...they did a great job with it so far.
Blue Mage has a very high possibility of getting included within the game anytime in the future sice its so common and it really is something that hasnt been there before in FFXI.
All we can do is just fanfic on and let Square do the job....I'm pretty sure theyll do a good job and will not over/underrate any job that would be coming out.
Something else...I mean even if they was no new jobs wouldnt it be nice if they would come up with Job Evolutions? Like in Ragnarok Online you can evolve your Job?

I would like to see blue mage, if they did it right. As long as your weapons aren't a fork and spoon, lol. I really liked playing whats his name for FFX, the blue mage cat guy. Yeah, he was cool and his abilities were really useful, at least to me they were. He was my uber guy, had more hp than anyone else and could do the same amount of damage as auron. I worked on him a good bit ,he kicked butt, lol. Too bad the game was too easy.
Geomancer would be really cool, I enjoyed that on FFT. I made my monk a geomancer, he was really cool.
To me gunmage just sounds silly, but thats just me. It wouldn't make sense to have one in FFXI. I mean we have a ranger.

Yeah, lot of what FFXI has in it kind of already disqualifies some job types (Chemist for example). A chemist in previous FF games (FFT is the only one I can think of) basically were just doing synthesis with the exception of no crystals being used.
Also they can easily cover the chemists ability to toss a potion on someone else and all by simply changing the items properties. Heck if they wanted to make it were a player can do a Curaga with a potion it's more viable to add that as a HIGH Level KeyItem in Alchemy.
Chocobo Knights as nice as the idea is, it would just kill the economy way to much. Chocobo's being rented is one of the few methods that exist right now to drain money out of the economy so that item prices just don't start sky-rocketing. Now if you can just get players to quit stupidly buying items at expensive prices then the setup for the AH and all will work as intended. Unfortunatly I still don't get why crafters are buying ingredients at such an expensive price then selling at losses, I mean wtf is that o.O
Oh well either way I can still navigate through what makes a profit and what doesn't so doesn't bother me if someone wants to sell and buy at those dumb prices I'll just adjust and get rich off those idiots.
As far as viable jobs the only ones I see with the most possibility is Mimes and Blue Mages. There are many abilities and spells that are specific to certain mobs that no job a player has can get, those are generally the ones that a Blue Mage would get.
That means a Blue Mage will not get spells from a mob that can cast spells that a Black Mage already has. From Yaguda's you have their Spin Kick (Stuns all targets around it), Goblin's you have Bomb Toss, Wights you have Dark Sphere and that AoE that drains monsters HP around you. Of course you have the suicidal ones too, like the Doll's/Grenade's Self-Destruct. There's even the Worm's Mighty Blow (Which obviously follows some sort of special rule for them to be able to do huge damage at one moment and do almost none another). There is quite a ton of possibilities for Blue Mage to be applied.
Then of course you have Mime, honestly though being able to mimic a job and use all their abilities is way to powerful. That is not how a Mime has ever worked though, they could only mimic a single action they had recently occur in their party (generally whatever the last actions was that occured). Now even though being able to mimic any job is to powerful being able to copy 1 ability from the party members in their party is not (Their 2hr would allow them to copy another party members 2hr, then have a regular ability that lets them copy the other abilities).
Those are the only two I see with the most probablility of being done. Other then that the one I'm a bit iffy on is dancer, they are basically just bards in all previous FF games the only thing was that it was the female characters choice for Bard. So it could be doable as just an asthetics thing were the female characters can elect to change their bard jobs function to dance instead of sing.
Geomancer, should really face it much of what would viable for a geomancer to have as spells and not be overpowered is already covered by BLM/WHM. Their ability like Geomancy is already covered, spells and abilities are already effected by the day and weather effect and not to mention the new items that allow your damage to act like a certain day and weather effect is occuring.
Oracle is basically just a WHM already, trying to classify it as a more powerful WHM and you already unbalanced the game for WHMs so that is a definate no.
That is my take on the jobs and possible new ones.
