    Ok. short answer.

You have to level every job seperately, and if you leave one job to level another, then it stays at the same point you left it at.

Sub jobs do NOT level as you level your main. SO in order to have a War30/MNK15, you would need to level monk to 15 or higher.
Skywise: Death due to S-E not likeing my cc for some reason after taking it for more than a year:

Now playing: Skywize- Back to being a PLD. Its good to be back :D

Like Zelld said, every job is independant of eachother. So what ever level you a job to that's the level it will have, so if it's changed out and not your Main or Sub at the time when you change back it'll have the same level it had (With exceptions as Sub).

Even though every job is independant of eachother only the Main job gets experience and can level up. Subs will remain at whatever level you left them at, unless half the Main job is lower then your Sub. In that case your Sub will temporarly be put at this lower level with all that you gain at this lower level, however it doesn't effect it's actual level at all.

If half your Main is a higher number then what you Sub is then you Sub will only go to it's actual level it will not go higher unless it's switch to Main leveled up then switched back as the current used Sub.

This also applies with the Conquest Points and Ranks you get in each nation. Each Nation has it's own individual Conquest Points and Ranks you can raise, when you go to a new one you are set to 0 CP and Rank 1 for that nation. Going back to your previous nation and you'll have all the CP you had before that change and the Rank you had.

The CP and Rank from the second nation is saved and stored away till you go back to that nation, then it brought back out and the CP/Rank from the first nation is saved and stored away.
