So, I keep hearing RDM becomes main healer later down the road and it got me thinking, what are all of the jobs roles at endgame?

It varies according to the situation and the subjob used, but in a (admittedly small) nutshell, it goes:
WAR: DD
MNK: DD
THF: TH whore or DD/Hate Management/Puller
WHM: Healer/Support
BLM: Nuker
RDM: Support/Enfeebling
PLD: Tank
DRK: DD
BRD: Support/puller for Merit parties
RNG: DD
BST: DD with pet
SMN: DD
SAM: DD
NIN: Tank
DRG: DD
BLU: DD
COR: Support
PUP: Hasn't really been established as useful in endgame yet ... or if it has, please educate me.
I think people are going to correct me on some of these but as far as I feel like thinking, this is what comes out.

There are more. Its all depend on how people want to play the classes.
But without a doubt, DRK, MNK, SAM, are Only bound to be DD
war/nin can be tanks
thf/nin can also somewhat tank...
PLD+Nin are bound by their only roles..but people do attempts to "want to DD"
DRG + PUP + BST have multiply roles... but mostly DD
Cor + BRD are pullers + buffer
While
SMN can DD or they are usually taken as healer... (since no healer seeking)
Blm are DD
WHM + RDM are healers...
Never expect Rdm to nuke like blm... because rdm can never do it. But people DO love to be picky and want their job only to DD... (i mean they do love run in to melee even @ 60s...)
Roles are different during BCNM
Cor are NEVER to be invited for BCNM... i can tell you that...
I do found people are ignorant... Cor can reset 2hr + do a very powerful dmg attack during their 2hr (only for /rng) yet no one use them.
For fights like Diabolos.. wouldn't it be better then bring a cor and take your luck? 1/3 chance the cor reset everyone's 2hr ... = 100% win.-add later-

Just remember that you as a player have a choice, you can play the job the way you want (within reason of course). If you forge good relationships with people in game and join a good ls, you can have a lot of fun and don't have to conform all the time. I'm sure plenty of people are going to post and tell me I'm full of it but they are wrong. I've done it, my son has done it, and plenty of my friends have too. It won't be as fast as if you conform to the way mainstream players ways but at least you can do it your way. Or make 2 characters, one for mainstream playing and the other for doing your own thing. It's worth pointing out a very narrow but important role not previously mentioned: crowd control. This is mostly done with BRDs and RDMs, and sometimes BLMs are used as well. BLU, the only job with both light and dark based AoE sleep, may be employed in that fashion, too, but I'm not sure about that.
RNG has one trick--but one very good trick--for keeping alliance safe from certain types of dangerous attacks (e.g. Hundred Fist): Shadowbind.
DRKs, BLMs, RDM/DRK, and maybe BLUs are used as stunners. RDM/DRK in particular can use Chainspell+Stun to keep monster from doing much for a minute, and BLU's Head Butt is on a short 10 second recast--even shorter with Haste.
I'm sure there are other important niches for various jobs, but those are what came to mind at the moment.Bamboo shadows sweep the stars,

A few observations about COR as puller (I've been meritting with it for a while now)
COR/NIN
Can be puller, but since guns are slow it means leaving the DDing early on current mob and also might need Light Shot to sleep the mob back at camp (like BRD does). Light shot is 60 secs recast normally, 50 secs with full merits, possibly shorter with lots of haste gear. I would much prefer an RDM pull if no BRD in merit party.
COR/RNG
Don't bother asking COR/RNG to pull unless you want slow pulls once the current mob is dead. COR/RNG does some nice dmg but doesn't like mob hate. Will want to do Slug Shot while engaged with mob, so takes a while to finish shot and disengage before pulling.
COR/WHM
I don't have any mage jobs lvled so have no experience of this, but I'm guessing this combo can pull with Blink/SS up (does /WHM give blink or SS?)

All jobs play a myriad of roles at endgame depending on circumstances and what it is that you're doing. I'll throw my 2 cents in on what I've seen or experienced doing as well.
WAR: DD Primarily, occasionally a tank (though rarly) often used to set up skill chains.
MNK: DD Primarily, occasionally tank (sky farming and such, not usually on bigger prey). Used in skill chains at times. Also a dying fad, but Chi Blast with a MND build can prove useful. Occasionally subs WHM if Chi Blasting.
THF: Treasure Hunter at the end of a fight, hate management for PLD/NIN tanks, skill chainer.
WHM: Healer, has to be on top of statis effects, raises (yes we let people die sometimes :3 ), curing. Haste, though usually handled by RDM or split responsibities.
BLM: Nuker, ES Sleep, crowd control. other ES enfeebles.
RDM: Number 1 enfeebler, usually back up healing (can main heal if no WHMs are available). Refresher and crowd control. Also, provided they have the gear to do it, can be a tank. Typically requires another source of refresh, enmity gear, and a thf to help with hate control. Not generally the best tank, but will fill the role exceptionally if you lack a pld or nin (or they died :x ).
PLD: Tank/kiter; Can DD, but usually best not to if Mob TP gain is an issue.
DRK: DD, skill chainer, Very heavy DD with soul eater and/or 2hr abilitiy. Nearly required if wishing to melee burn something (Kirin, Baha1/2, Vrtra et cetera). Can take 6% off JoL with Soul Eater alone I've seen @.@
BRD: Support, refresher. Wonderful for BLM parties with AoE refresh. Occasionally sub BLM for ES for elegy (Kimaria) or finale (Baha 2). Meritable songs to decrease hate gain or hate loss can prove useful in particularly long fights.
RNG: DD, skill chainer, kiter.
BST: Can DD, but what I've seen them used most for is crowd control. Particularly useful on Rostrum Pump runs, and also Tiamat using antilions to battle Course lings and elementals. Can save the day in Aery charming an accidently aggroed Darter.
SMN: DD, support buffs. The level 70 blood pacts work wonders on many HNMs. We've done a Tiamat in under an hour using 3 SMNs with Levithan and Diabolos blood pacts. Very strong DD in many cases. Can also help with tricky pulls (Limbus) using Carbuncle. Also been known to solo/duo an number of tough NMs with a lot of patiences and time.
SAM: DD, skillchainer. Very very useful in fights where you don't want to feed TP to a mob. Meditate and the meritable JA to give TP to other party members means you can do a skill chain with out ever hitting the mob (appart from the skillchain itself).
NIN: Tank, kiter, crowd control. Subtle blow is often underused. They really don't feed that much TP to mobs (though might want to diengage is you need a quick recovery). Often use /drk for tanking. Can be used to hold two of the shark pets from JoL once you have him locked, meaning JoL will only spawn one pet every couple of minutes as opposed to 3.
DRG: Primarily DD, but Dragon killer effect can be helpful as well in certain fights. Good job for longer fights since High Jump and Super Jump will remove a bit of thier built up hate. However, most people that have this leveled in my shell don't typically come as DRG, but do occasionally for Dynamis and various special case events.
BLU: DD, support, healing and lots more. Very very powerful DD in HNMs with Cannonball spam. AoE stoneskin and various buffs are helpful as well. Of thier new catagory 2 merits, the one that makes a single buff AoE is very useful in situations. In particular I recall a few 3k+ magic burst on various HNMs where the blue used the AoE ability and the Magic Attack bonus trait.
COR: Support/slight DD. Mostly used and refresher and thier pet roll is very very useful for smns, bst and pups. Thier elemental shots help enfeebles be a bit more powerful as well.
PUP: We only have 1 of these in my shell currently, and hasn't been able to play it that much, but depending on set up of the pup it can be support, DD, skillchainer. I havn't personally noticed one area that they excell, but seems to be a decent over all job. I'm sure more uses will be found with this job.
EDIT: Keep in mind what I or others listed are by no means a complete list. What I stated is only what I've seen or experienced myself. There are plenty of people and groups that have experimented with various strategies that have worked for them. In particular I remember a blm/nin tanking Byakko, that is an amazing feat in my opinion. Most jobs have a defined place in an event, but over time people stretch thier limits and explore new territory. If people didn't do that we wouldn't have PLD/NINs tanking fights or any of the various strategies we have today. So don't feel restricted if you class or job you love doesn't do what you want. I think versatile roles likle RDM really depend on your shell.
Some shells would have been using RDM Tanks for ages regularly, and will say RDM Tanks are as common as PLD or NIN to them.
Others with less exposure will say different.

LS structure and recruitment I suppose could play a major role in what is considered the stantard function for any particular job for that LS.

The jobs roles at endgame are the exact same roles at early game.
Disagree with me? Well you shouldn't.
Wars can tank great in the dunes true...but they can also tank great at certain endgame situations. Not as good as Nin or Pld, but damn good enough to be called a tank. While at the same time, they're great DDs...in both early lvls and endgame situations.
Mnk: DD, through and through DD. Sure they can tank at times for some endgame NMs and fights...but they can also spot tank early on too.
Thf: DD 'hate managment' (personally I think that's more of a side effect of one of their 'don't kill me' abilities rather then an actual role), puller....yup, does that as well in the dunes as it does endgame.
Whm, Rdm, Smn, why they're all support/healer classes. And though Smn is a top tier DD at HNMs, they can also bust out some big hits early on as well.
Blm...well they ain't tanks, they don't get natural cures, guess that leaves them with only one role (though I do feel bad when they become full time /whm healer in Colibri pts)
Sam, Rng, Bst, Drk and Drg, all as good at DDing in the dunes as they are in sky.
Blu, well seeing as their first three spells are a DD spell(foot kick) a debuff(sand spin) and a buff(pollen), I think this one is fairly obvious.
Cor? They buff, they shoot, they support. Whether it's the exp bonus in the dunes or the MACC bonus in a mana burn, they're always a support class that can drop some dmg.
Brds, they sing their songs, buff the allies and weaken the mobs. Same as they do at lvl 10 is exactly what they do at lvl 75. Brds can always pull, so that's not something that's endgame exclusive.
And Pup...well I have no idea what Pups role is other then to make Bst and Drg look good (I keed, I keed)

Melee DDs play thier role very differently in HNMs vs EXP. If you told a MNK to DD Tiamat like a traditional TP burn party you're going to get your tanks roar'ed out the wazoo and the mnk will end up dead.
Before the Melee burn trend on fights like Vrtra, Kirin and Bahamut a MNK typically just sat in the corner boosting and unleashing Chi Blast whenever it was up.
Rdms don't play thier typical Pink Mage role at endgame either. Dynamis they are the sleepers, sky...well sky they can solo. JoL they can hold Phuabos to keep JoL from spawning 3 at a time.
Blms in particular is very different from thier EXP roles. Modern Blms solo pretty much from 55-75; which means unload all your MP as fast as you can. HNMs we coordinate our spells with skillchainers and/or other BLMs. It's not always tossing free nukes.
PLDs are still tanks, but thier sub job differs and how they play is different. /Drk and /Nin are far more common than /War on HNMs.
I'll agree that the typical role they fill is similar to what they did for 75 levels; but exp does not give you an accurate view of what they'll do in endgame. Not by a long shot.
