Let me tell you the three secrets to "OMFG UBER LEVELUPS!"
1) Build a static or build your own party
I know, hardest thing to do, right? A Static party lets you set out the rules of the party, the earlier the better. This way you all know your roles, know them well, and begin to blend together to anticipate each other's moves.
Building your own party allows you to be judge of what you need for a certain EXP camp.
2) Don't just go for the OMFG IT++ mobs.
FFXI was not designed around taking 5 minutes to kill a single IT. Eat up high VT low IT mobs in chain 4's and 5's. Your puller really effects this part, so make sure they are good in their role.
3) Research Research Research
Look up your camps. Understand what your tank can and cannot tank. /sea region the zone you want to EXP in, make sure there's not a clog of parties there.
And as for SMN in party? Yea, they can be a gimp heal, but the best will Stoneskin you, Haste you, and still cure you. As a NIN tank, those two alone turn you into a major badass tank.
