Inflation will always occur, only the pace and the high and lows will be different.
For instance if I said server X has the scorpion harness at 1 million, many would, without thinking, want to transfer to that world because server Y has it at 7 million. However that is just one item and you can not make a comparison on just one item. On a younger, less populated server, the price of everything may be lower right now but that also means the supply of things that are easily acquired on a more mature server is much lower, and many of the desired items are either extremely rare, more expensive when looking at the ratio of cost to income or simply non-existent because no one has leveled a craft high enough.
So in the above fictional servers, if everything on Server Y other then the SH is 8x what they are on Server X, then comparatively Server Y has an economy where the SH is easier to obtain. Many people while Hydra was active wanted to transfer over to the 'clean' economy thinking the lower prices would always stay. Well, technically they might have if SE didn't introduce a lot of gil into the economy, but the expensive items would always been expensive. Low prices on common items mean a low earning potential. Rare items would still be rare, and with a comparative high price more then likely in line with or higher then the existing servers.
People asking to migrate to a new server think that they will be able to continue selling whatever they make or farm to make gil at the same prices as they do now while at the same time having the cost of everything else being radically lower. It doesn't work that way and you would be in a worse position on a new or young server then you would be on a mature one.
