Yes, there's a secret third option. He'll display the lists, but you have to say "I'll think about" and then trade the item(s) to him to finish, unless you're pyaing with gil. Then you must wait one FULL game day before you can retrieve the pass.

took a lot of tries before the NPC responds.... needed to filter out /say or it gets really crazy.

beginner's list : 3 subjob items from VK, wild rabbit tail, cup of dhalmel saliva, a bloody robe. you need to give all 6.

intermediate's list : jade cryptex, silver engraving, tirteen-knot quipus. you need all 3

advance list : we already know. coffer keys from beastmen strongholds, or testimony, or 3 pxo ja chips camine, cyan, grey.

Is there any benefit for doing the tougher items as opposed to filling up the newb areas?

best part about the tougher items are that most players already have a spare test or keys already. So like 80% don't even have to go farm anything.

It's also somewhat faster and easier.

I was able to easily solo for a test in Davoi as WHM75/RDM37. Took a while to get the drop, but it definitely beat competing against the universe in Valkurm and Buburimu, since it only took 1 drop to complete the quest.

I just went with some friends to Sea Serpent's Grotto and killed Sahagins for Testimonies, only took about 30 mins.
