Phew, after lots of searching I was finally able to find a translation for the opening theme to FFXI. "Legend- The Crystal Theme-Memory of the People-Memory of the Stone"
Despite my initial thoughs upon listening to this song (which plays during the opening FMV) its lyrics are not in Latin. They're actually in Esperanto, which is a very little used language. It seems to be very similar to Spanish though.
