Are you asking if you can have multiple jobs leveled on the same character? Yes.

No. You can have a subjob, which functions at half the level of your main job. You do not gain exp for your subjob, however, and must level it as your main job separately.
For instance, if you start as WAR and level that to 18, then you'd unlock your subjob and switch to MNK, effectively making you a MNK01/WAR01. However, as you level MNK to 10, for example, you'd be a MNK10/WAR05.
But at no point can you level two jobs at once. You can however level every job in the game separately if you wish.

Here's a good site for info on the subjob quests.
There are two of them, one in Selbina, one in Mhaura. Once you activate one of the quests, you can't do the other one, so it's best not to activate either until you have all three items for one of them.Ellipses on Fenrir
There is no rush. If you're not willing to take your time, don't be surprised when no one wants to give you much of theirs.

At level 18 you can do a quest in either Selbina or Mhaura. Both require that you find three Rare/Ex items on mobs in or around the area. Keep in mind, however, that you can only do one or the other. So if you accept the quest in Selbina you can't change your mind and take the one in Mhaura.
You'll likely get at least two of the Selbina items while leveling in Valkurm. The Magicked Skull, however, can prove to be a bit of a challenge. While parties can take out ghouls in the dunes, there aren't many of them, and they don't always drop right away. It's good to have some help for that final item.

@OP, Many (if not most) players got help getting their sub-job items. If you're part of a linkshell or you end up in a party with some nice players, ask around for help with the subjob quest and getting the items.They that can give up essential liberty to purchase a little temporary safety, deserve neither liberty nor safety. - Benjamin Franklin
