I don't see a chocobo racing guide yet, so I though I might as well make one myself with anything I find. For now it doesn't have much (Alot will be quoted from SE for a while), but I'll add more and more stuff as I go.

Chocobo racing is here at last! Aren't we all excited?

INTRODUCTION
What is chocobo racing? Well, for those of us that have raised our own chocobos into adulthood and through to retirement, there's got to be stuff we can do with them besides ride them. Besides, Chocobo Hot & Cold just isn't for everyone. So, how about racing them? Sounds like a good idea to me!
Of course, you must have the Treasures of Aht Urghan expansion pack installed and registered. Once you've got that, you need an adult chocobo. Got those? Good! Now, let's get started.
JOINING A RACING TEAM
There are three racing teams that you can join: San d'Oria, Bastok and Windurst. Your records with each team are kept safe, so if you quit and decide to rejoin later your records will still be there.
You will need your chocobo's VCS registration card or its racing form to register to race, so naturally you need a fully-grown chocobo. Trade the card to the appropriate person and poof - You're registered.

THE BASICS
So, you're registered with the chocobo society. Yay! Now we can get to the good stuff. First, let's get to that main screen by talking to your friendly neighborhood CRS guy (listed in sections above), of course of the same team.
~Chocobucks
This is listed at the top of the menu. Chocobucks are a special currency in the CRS you can use to buy stuff and train your chocobo and such. This is also your entry fee for an official race.
~Chocobo Confirmation
You will see your chocobo in a paddock (sp?). You can view your chocobo's name, affiliation, gender, status parameters, abilities and weather preferences. How awesome is that? ...yeah, I know. Anyways...
~Item Confirmation
This shows all the items you have the CRS holding for you. (need more info)
~Free Run
These are basically practice races. It costs gil to enter one (and the price increases each time you repeat that day) but you can win chocobucks.
~Official Race
At first you can only do these. The first three are novice races that don't cost a thing, so use those to get acquainted with the system.
~Re-run
Basically it's a repeated official race. The prizes aren't as big here. (need more info)

PREPARING FOR A RACE
So you decided to enter your first race. Sweet. But you can't just jump right in. There are things to consider and another menu to traverse!
~Race Overview
The NPC will tell you the name of the race, the number of entries, and your objective.
~Visit the Paddock
It's good to know what the enemy has planned. Here you can view entries to the race you'll be competing against. You'll be able to see all the info you see on your own chocobo, but instead of an owner you'll get the jockey's orders.
~Jockey Orders
Here you can tell your jockey what pacing tactic to use in the race.
~Equipment
Here you can equip items on your chocobo for the race. All items are consumable, so choose carefully!
~Start Race
...starts the race. No confirmation box so watch out.
RACING ADVICE
Now that you know your way around, wouldn't you like for me to give you some tips on this? Yep, I knew you were ganna say that. Here we go.
~Stats
Yeah, you think you're all that with that chocobo you've got there, what with the awesome END and STR, Canter and Gallop, but...poor mental attributes? I hope you're not skipping this part.
-Strength: Affects the running speed of your chocobo. No speed = you in last place.
-Endurance: Affects your chocobo's stamina. If your chocobo runs out of stamina he'll start slowing down.
-Discernment: This affects how well your chocobo will listen to its jockey (whom tells him how to keep pace), and how well items are used.
-Receptivity: Helps your chocobo avoid accidents
-Weather: Affects your chocobo's performance under certain weather conditions.
-Abilities: Your chocobo's abilities help in certain ways during a race.
Gallop - Increases running speed?
Canter - Increases Endurance?
Auto-Regen - ?
Burrow - ?
Bore - ?
Treasure Hunter - N/A
~Jockey Orders

Keep Pace - Chocobo will keep the same speed throughout the race.
Sprint - Chocobo will give it all he's got, speeding away at the start. Be warned, as this will tire your chocobo quickly if you go unprepared.
Final Spurt - Chocobo will save energy until the final stretch of the race. This usually is pretty reliable method.
