Hmm, as a Taru in Windy, you'd think I'd be getting a Jennet no matter what, but my choc is definitely turning out Destrier black. Oddball chance I'm mistaken and she'll be blue, but them's black tailfeathers...

No it's pretty obvious that the 5 chocobo classes are intended for different specifics. Info about the breeds even specify this.

Rounsey is catch all not particularly best at anything, but I bet it's presence helps most in breeding.

Desterier is attributed to having good durability. They probably stay longer then any other chocobo, good for wandering around.

Coursiers is attributed to having good strength. Fastest chocobo you can get, probably be a favorite for racing.

Palfrey is attributed to having high discernment. Probably good for digging.

Jennets is attributed to having high resceptivity, not sure yet really what would attribute too..
