I dont think it matters about the gender unless you have plans to race it and that will be a few updates befor the racing scene gets implemented, but mine is a female, and yellow.
I named her "frosty Beak" I was hoping for a blue choco, maybe I'll name my next choco jr or Frosty Beak II

A few pointers for raising a chocobo

1. as a egg, only watch it/carte for it once a real life day or it may have problems as a chick.
2. as a chick, name it right away
3. for food, as a chick it is written to feed it pastes, not as hard for it to digest and it doesnt have to eat as much (a chocobo can eat more gyshalk greens but thats for broke choco breeders)
4. Kepp a regular scxhedual
5. care for it every chance you get but do not over care/smuther it at any stage.
