Do a little research on your server and see which one you can profit more out of. The people that are rich are usually those that have most of their craft at midpoint so they can earn money from more than one crafted item.

As a general rule, the crafts that make the most money are the ones that cost the most to level. The harder it is to level, in theory, the less people there will be at the top to compete with you. Really though, at this point in the game it's hard for me to recommend investing into crafting as a means to make money. You're going to lose a lot of money before you get your crafting skill up to any profitable level, and even then it can be a challenge finding some decent profit synths. As with pretty much anything else in the game, don't do it unless it's fun for you.
I'd say a number can be profitable at low levels if you're providing materials to others ... for example, copper ingots might sell for 4k for a stack, with costs of 2k for a stack of crystals and about 500 for all the ore you need. That's 1500 profit (minus AH costs) for some time and one AH slot. There are some similar things to do with things you might farm or HELM. For end products, though, you're looking at the high levels.
