I'd suggest you look around at what craft interests you and make your decision that way. Any craft when used intellegently can make money. Some do so through high cost items. Goldsmithing anyone? Others do so through large amount of consummable sells Woodworking (arrows, bolts some ninja tools particulary Shihei), Food (any of a variety of food particulary Insect Balls (for fishers), Meat Mithrakabobs(melee), and Yagudo Drinks(caster)), and Alchemy(Medicines, Beeswax and possibly boltheads) keeping this in mind just pick the one that seems interesting and try it out.
Final Bit of Advice
Power Leveling a Craft and then asking high level crafters what to craft for money may result in a bad advice, loss of large amounts of money and many flames. It is highly suggested that forum users refrain from that action.
Good to see not everyone is scarred by the flame wars that usually arise.
I guess i can give some serious advice...
Study.
Study the crafts, look in the AH, look up the recipes, check where to farm materials, check your pocket and do some math for each recipe, because theres materials you need to buy sometimes unless youre willing to spend alot of your time camping/mining/farming, sometimes its better to just farm some spare change and buy the goods.
A good "starting" craft? Usually one would say Alchemy, Cooking, and possibly Woodworking, many of the goods are easily obtained in the field or very cheaply off the AH or NPCs, however i hatd to say, everyone has their own pace, every server has it's own economy, its a matter of how much time and gil you are able/willing to give up for it, and that you will learn only by studying the crafts.
Me? I studied so much i have all crafts up to 30, and Alchemy upto 65, thats what ragnarok server told me to go for... :p

Whatever craft you're going to pick, this site has the breakdown per level.
Pick something around 5 levels above your current and synth away.
Try to pick something with low price or easy attainable ingredients on your server.
Lather.
Rinse.
Repeat.
To add on to what Balfree was saying about math and research. Math is your friend in the crafting world. You cant make a "smart" profit without it. The same goes with research. A good starting craft would be a craft relative to your job or others job in a party, which would be those that were mentioned before hand like alchemy or cooking. In the end though, the best craft is one you enjoy doing. Also, there is no one craft that you can level and not have to level any others in the process with the exception of cooking and maybe alchemy (i think.) So once you choose the craft you like or one that is relative to what you want to do, make sure you check down the line of recipies and see what other craft plays a role in some of the later synthesis. Remember to do the math and research and you wont have to many problems in your crafting career and it will (should) be enjoyable ^^~
what level are you?
if you're just starting your first job, you may be better off to not start a craft until you get a job to level 50+ or so. just farm until then.
crafting takes a massive amount of time and money invested in it until you start to get any real return

Personaly i have only been playing for a month and i already have clothcraft to 23, its pretty easy to farm/guild camp the materials in windy (my home city) for the first few lvls and my main job is BLM, but chose your craft according to your city and what you plan as your main job. And note that most low lvl finished product synth will never make a profit because the market is flooded with them, keep that in mind ^^.
i'm not saying you ...can't... level a craft at the low levels, i'm saying it's easier and more effective if you just wait till you have a job or two already high level.
like said above, you won't make much money off the lower level synths.
